Bircher Muesli
Serves 2-3
Prep time: 10 minutes (plus overnight soaking)
- 1 cup rolled oats
- Handful nuts – almonds, walnuts, brazil nuts; roughly chopped
- Handful of seeds – sunflower, pumpkin, sesame
- 5-6 dried fruit – dates, apricots, apple, tropical fruit; chopped
- Pinch of cinnamon
- 1 cup warm milk or water
- 1 apple or pear, grated
- Natural yogurt to serve
- Honey or maple syrup to sweeten
At night, combine the oats, nuts, seeds, dried fruit and cinnamon in a bowl. Pour over the milk or water and cover with a plate. Leave to soak overnight.
In the morning, mix through the grated apple and serve with yogurt and honey to sweeten.
Tip: In winter when it is cold, put the dry ingredients into a large thermos. Shake to combine. Scald* the milk or boil the water and pour into the thermos. Screw on the lid and leave to soak overnight. In the morning the muesli will be nice and warm. Pour into bowls and add fruit and yogurt. Note: depending on the type of rolled oats used you may need to add extra milk or water if the mixture is too thick.
Variation: Add some freshly grated root ginger for extra warmth in winter.
*heat milk in a saucepan until small bubbles collect around the side of the pan but do not boil.
