Choc Oat Cookies
Makes 12 large cookies or 20 small cookies
A recent creation from my kitchen with a healthy twist. These moist and chewy cookies remind me of the cookies I ate in Canada. They are quite delicious and a special treat for Christmas festivities!
Prep time: 20 minutes
Cook time: 15-18 minutes
- 125g butter
- 1/2 cup sugar
- 1 free-range egg
- ½ teaspoon vanilla essence
- 1 cup flour
- 1 teaspoon baking powder
- pinch of salt
- 1 cup small rolled oats
- 1 cup grated zucchini
- ½ cup 70% chocolate chunks
Cream butter and sugar in a food processor. Add egg and vanilla until creamy. Sift in flour, baking powder and salt, mixing briefly to combine.
Mix together the oats, zucchini and chocolate in a bowl. Add to cookie mix and pulse to combine. Drop spoonfuls of the mixture onto a well-greased baking tray. Bake at 180°C for 15-18 minutes until golden. Remove onto a rack to cool.
